Interactive effect of pre-fermentative grape freezing and malolactic fermentation on the anthocyanins profile in red wines prone to colour instability

Abstract The effects of pre-fermentative freezing red grapes from Schiava variety and co-inoculation with lactic bacteria were evaluated on the profile anthocyans musts finished wine. Peonidin-3-glucoside is main anthocyanin in grape musts, but it was overcome by malvidin-3-glucoside at bottling. Grape increased extraction all anthocyanins musts. However, amount except peonidin-3-glucoside lower wines frozen than control wines. Wines obtained showed higher content their respective controls. Petunidin-3-(6′′- p- coumaroyl)-glucoside, peonidin-3-(6′′ -cis - coumaroyl)-glucoside malvidin-3-(6′′- trans dramatically affected interaction two applied factors. Colorimetric hue (H*) strongly correlated peonidin-3-glucoside, spectrophotometric tint (N) malvidin-3-glucoside. Tint also a positive correlation malolactic fermentation. Graphical abstract
